Slow Cooker Chicken Curry
🍏 A fantastically simply and wonderfully tasty homemade curry. Just chop and put in the slow cooker - curry ready in 4-6 hours.
Serves 4
4 chicken breasts or 8 thighs cut into chunks
1 onion, finely chopped
3 garlic cloves, finely chopped
2.5cm piece fresh ginger, peeled and grated (or use the cheat tube version 😳)
2 tbsp tomato purée
400g tin chopped tomatoes
1 tsp ground cumin
1 tsp ground coriander
2 tbsp garam masala or curry powder
3 tsp paprika
150ml double cream or coconut milk

1️⃣ Put all ingredients except the cream (or coconut milk) in the slow cooker, give it a good stir, pop on the lid and cook on low for 4-6 hours.
2️⃣ When ready to eat, stir in the cream (or coconut milk) and add more garam masala or curry powder to taste. Serve with rice, cauliflower rice and sprinkle with coriander (if you have any!)
