Slow Cooker Sausage Meatballs
🍏 Such a staple in our house. Even 1 out of 2 children will eat it! Also the way to my Mother in Law’s heart which is always helpful!
Serves 2 (just add more sausages for more people)
6 good quality sausages
400g passata
1 tsp fennel seeds
1 red onion, finely chopped
2 garlic cloves, finely chopped
1 bay leaf
Pinch dried basil
100ml red wine

1️⃣ Squeeze the sausage meat out of the skins into balls. Each sausage should make 4 balls.
2️⃣ Warm some olive oil in a frying pan. When it is hot add the fennel seeds and cook for about 30 seconds.
3️⃣ Add the sausage balls and cook until browned all over.
4️⃣ Transfer sausages to the slow cooker, add the onion, garlic, passata, bay leaf, basil and wine.
5️⃣ Cover and cook on low for 4-6 hours.
6️⃣ Serve with cauliflower rice and roasted veg or with pasta if you need some extra fuel/calories.
