Fruity Moroccan Lamb Shanks
🍏 Lamb shanks are perfect for slow cooking, they also go wonderfully with fruity sauces as this tasty one pot shows.
Serves 2
2 lamb shanks
200g passata
1 tbsp apricot jam
2 garlic cloves, peeled and chopped
zest and juice of 1 orange
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1 fresh rosemary sprig
A few dried apricots
300g baby new potatoes, washed
1️⃣ Mix the passata, jam, garlic, orange zest and juice, ginger, cinnamon, rosemary and apricots together in the slow cooker.
2️⃣ Add the potatoes and lamb and mix well to coat. Pull the lamb to the surface so the potatoes fall below, season lamb.
3️⃣ Cook on low for 8 hours or until meat and potatoes are tender.
