Sea Bass with Brazil nuts, kale and pomegranate

🍏 A great combination of flavours from The Body Coach in this midweek recipe. Packed with goodness and easy to prepare and cook.

Serves 2

 
Pan fried sea bass with broccoli, kale, Brazil nuts and pomegranate seeds

2 tbsp olive oil
2 x sea bass fillets, skin on
100g kale
100g tenderstem boccoli
4 tbsp pomegranate seeds
6 Brazil nuts, chopped
1 red chilli, finely sliced, seeds are optional.

 

1️⃣ Steam the kale and broccoli for 10-15 minutes until tender.
2️⃣ In the last 5 minutes of the vegetables steaming, heat some oil in a frying pan over a medium heat.
3️⃣ Once the oil is hot, lay the fish skin side down in the pan. Cook without turning for 2-3 minutes then carefully flip it over. Remove the pan from the heat and let the fish finish cooking in the residual heat.
4️⃣ Transfer the steamed vegetables to a bowl and mix with the rest of the oil, pomegranate seeds, Brazil nuts and chilli.
5️⃣ Plate up the vegetables and sit the fish on top. Serve with brown rice if extra calories are required.
