Slow cooked pork and apple stew

Pork and apple is a great flavour combination. I love a slow cooker for getting the meal prep out of the way earlier in the day so there is less to do at dinner time when everyone is tired and hungry!

Serves 2

 
slow cooked pork and apple stew served on a bed of cauliflower rice
 

500g pork shoulder (this was actually belly but quite lean still) – cut into 4-5cm sq
Half an onion, finely chopped
1 apple peeled and chopped – mine was a cooking apple, an eating apple would also be fine
2 garlic cloves, chopped
200g mushrooms sliced
200ml white wine, cider or stock

 

1️⃣ Season the pork and brown in batches in a little oil.

2️⃣ Transfer the pork and all other ingredients to the slow cooker.

3️⃣ Cook on low for 5 hours.
