Halibut in Creamy Coconut Sauce

🍏 An interesting alternative to simply pan frying halibut. A deliciously tasty sauce, not too much to over power the fish, would also be great with chicken I think.
Serves 2

2 boneless, skinless halibut fillets
Butter
Half a can of coconut milk
Half an onion, finely chopped
1 tbsp finely chopped fresh lemongrass
1 tsp lime zest and 1 tbsp juice
1 tsp grated fresh ginger
1 clove garlic, finely chopped
2 large handfuls of kale

 

1️⃣ Start by steaming some kale.
2️⃣ Whilst cooking the kale, warm some butter in a frying pan on a low heat and cook the halibut for a few minutes on each side.
3️⃣ Transfer the halibut to a plate then put the coconut milk, onions, lemongrass, lime zest and juice, ginger and garlic in the frying pan and bring to a simmer.
4️⃣ Cover and after a couple of minutes add the kale and arrange the fish on top. Cover and cook until fish is heated through.
5️⃣ Serve with rice if required and a chilli to garnish.

A top tip I’ve only just discovered is that you can freeze coconut milk if you only need to use half the tin.
