Spicy Sweet Potato and Red Pepper One Pot
🍏 What could be easier than chopping all the vegetables and then returning several hours later to this amazing one pot with a bit of a kick. Have as a vegetable side or a main meal. A fantastically warming meal.
Serves 2 to 4
1/2 onion
2 large sweet potatoes
1 red pepper
400g passata
1 tsp paprika
1 tsp cumin
1 tsp ginger
1tsp turmeric
1/2 tsp of chilli powder (I used cayenne pepper 🥵)
1 clove garlic
1️⃣ Chop everything and put in slow cooker. Leave to cook for 7 hours on low 4 hours on high.
2️⃣ Serve with fresh coriander and rice. Mine had cauliflower rice and yogurt as it was hot!!
