Butternut Squash Salad
🍏 This butternut squash salad is packed full of nutrients with pomegranate seeds, goats cheese, greens and a spiced cumin kick. Definitely one to try.
Serves 2
1 small butternut squash, peeled, seeded and cubed
1 tsp olive oil
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp cinnamon
1/4 tsp cayenne pepper (optional)
4 large handfuls of salad leaves
100g goats cheese
2 Medjool dates, pitted and diced
40g pistachios
3 tbsp pomegranate seeds
1️⃣ Preheat the oven to 180C and line a large baking sheet with baking paper. Place the butternut squash cubes on the sheet, drizzle with olive oil and season well. Roast for 30/35 minutes or until tender and browned around the edges.
2️⃣ In a small bowl, stir together the cumin, coriander, cinnamon and cayenne (if using), set aside.
3️⃣ Remove the butternut squash from the oven, let it cool slightly and, while warm, toss with the spice mixture.
4️⃣ Assemble the salad with the salad leaves, goats cheese, dates, pomegranates and pistachios. Drizzle with a little olive oil and serve.
